Beer recipes featuring Williams Bros beer

No doubt you’ll know about beer battered fish and chips or steak and ale pie, but what about beer tiramisu or beer-infused macaroni cheese?

We love cooking with beer at Williams Bros Brewing, so we thought we’d share some of our favourite recipes. It’s a whole new way to enjoy our Scottish craft beer.

If you are planning a beer-themed dinner party (very Come Dine with Me) we can recommend every course for a memorable night.

Beer-braised lentils make a hearty starter. Serve with smoked salmon or with a variety of vegetables.

Fry shallots and cook until soft. Add 200g of puy lentils and 175 ml of Fraoch heather ale from Williams Bros Brewing. Simmer until almost all the liquid has boiled away. Add stock and a couple of thyme leaves and cook gently until the lentils are soft.

Beer macaroni cheese could become a family favourite, but can also be a conversation starter at a dinner party if you serve one big pot in the centre of the table.

Fry garlic in butter, then add 500ml of milk and 250ml of Joker IPA

Add 220g of macaroni and cook in the sauce until the pasta is cooked and completely covered. Add 100g of cheddar and mozzarella to the pan. Once the cheese is melted, sprinkle more mozzarella on top and put it in the oven for about 5 - 10 minutes until it is browned on top.

To finish the meal, make beer tiramisu.

Mix mascarpone and vanilla extract with our Chokka Blokka mocha stout. Whisk cream and icing sugar until smooth and fold into the mascarpone mix.

Dip sponge fingers into the Chokka Blokka stout and line glasses with the sponge fingers. Spoon the cream mix on top and grate chocolate on top.

This beer recipe is a BBQ favourite.

Rub a whole chicken with muscovado sugar, paprika, cayenne pepper, mustard, thyme and salt.

Use a can opener to take the top off a can of our Craft Lager. Put the can into the chicken cavity, stand it on the BBQ and cook for 1 hour 20 minutes, until the juices run clear.

Be careful when you remove the can from the chicken before carving. It will be very hot.
